Ingredients

4 tbsp spelt flour
-
1 cs of the matcha
-
½ cc of salt
-
4 eggs
-
2 tbsp skimmed milk or coconut water
-
3 tbsp Orezza sparkling mineral water
- A bit of cooking oil
- 250 g mixed berries (e.g. blueberries, raspberries, strawberries, halved or quartered depending on size)
- 1 tbsp liquid honey
Preparation
Step 1
For the pancake batter, put the flour and the rest of the ingredients, including mineral water, in a large, tall container, mix until smooth, leave to stand for approx. 20 minutes at room temperature.
Step 2
Heat a little oil in a non-stick pan, pour a little pancake batter in thin layers so that it just covers the bottom of the pan, brown until it comes off, turn and continue cooking, do the same with the rest of the batter, keep warm.
Step 3
Put the berries with the honey in a saucepan, heat briefly and garnish the pancakes.
